Salt brings the Hungarian countryside to a chef’s counter in the heart of Pest. The kitchen works with foraged herbs, small farms and wild ingredients, and uses old techniques of drying, pickling and fermenting to build a tasting menu that feels both rustic and very modern. The setting, in Hotel Rum, is intimate, and the conversation with the cooks is part of the evening.
